When the pig dies... Not like in Minecraft :D

 As I told you in the first post, once the pig dies...

My grandmother never wanted to see when the pig was killed.

I was always in the kitchen window and watching the run after the pig in our garden, when several adult men try to push down the pig, first hit the front head with an axe to create a brain haemorrhage, then using the big knife to put it in the neck and the blood came out...

Sometimes it took a long ride... as the pig was big and strong, and cried very badly. 

Nowadays, it is forbidden by law to kill pigs like this... it was in the old times, in Hungary, before the Law was changed...

I was always standing and talking to the pig through the window... I told you yesterday, you should be prepared...

--> Nah... you can understand now, why I got the role of the Executor in the children's ballet in primary school...


Back to the pig, and not more ballet in this post...


So after the pig was not able to do more, they started to use fire to burn down the hair from the skin... the pig became totally black...

Burning the skin has a very strong smell...

Then comes a fun part, I also did it a few times... use a sharp knife and start to remove the upper part of the skin... just like you would do it on a toasted bread, when it is overbaked...

Why?

As this skin gives the same skin, what you eat, for example, during the Flæskesteg.


After this, there is a breakfast break or pause... here you can try the blood with scrambled egg.... the first food of the "Disznótor".


Then the cutting comes, when you open up the pig and separate the different inner organs...

You can use the colon system as well, or you can buy in advance a plastic or other animal colon system... for the sausage making...

So you will need a lot of big huge big bowls to pack the different parts...

In the meantime, some people all the time just clean and pack...

Others prepare the spices and get ready to make minced meat... machine bowls a nd a lot more...

You will need a lot of salt as well, paprika, black pepper, and other important spices... and herbs...


Usually, the negotiation starts much earlier, how much this and that you want to make... but it can change during the process as well... 

Why?

You see the pig and how good it is inside, and you get inspired....


Nah, this is a long day process...

And you will have to call a vet doctor as well in Hungary, who explains the meat, that everything is ok...
